Lemon Tea Snaps

Tiny little lemony sugar cookies painted with our same cookie paint. Eris wanted to find a lemon cookie and was interested in more fancy decorated cookies. 

Ingredients

0.5 cups unsalted butter
0.5 cups sugar
0.5 tsp

salt

0.5 tsp baking soda
1 tbsp grated lemon rind (lemon zest)
2 cups unbleached all-purpose flour
2 tbsp lemon juice

Instructions

  • Preheat the oven to 350 degrees F
  • In a large mixing bowl, cream together the butter, sugar, salt, and baking soda. Mix the lemon zest, then half of the flour. Add the lemon juice, then the other half of the flour.
  • Roll the dough into a 1/8-inch-thick rectangle on a piece of parchment paper. Transfer the parchment to a baking sheet. Prick the dough all over with a fork, and cut it into 1 x 1.5 " rectangles. There is no need to separate the rectangles; all you need to do is cut the dough. Alternately, cut into shapes and place on cookie sheet. 
  • Bake the cookies for 15 to 18 minutes, until they are light golden brown. Remove them from the oven and transfer to a rack for cooling. When cool, they break cleanly into individual cookies.
  • Painted with the same paint used on the sugar cookies. Eris wanted YET ANOTHER painted cookie!
