Apple Crack
Eris' 2019 pick is nominally called Apple Spice Oatmeal Cookies, but we like to refer to them as Apple Crack - so good they're instantly addictive. She also made them by herself without supervision - the second recipe she has done so (after chocolate chip)
Ingredients
1 3/4 cups | quick oats |
1 1/2 cups | all-purpose flour |
2 tsp | baking powder |
1/4 tsp | baking soda |
3/4 tsp | salt |
1 tsp | cinnamon |
1/4 tsp | ground ginger |
10 tbsp | softened unsalted butter (1 1/4 sticks) |
1 | Granny Smith apple, peeled, cored and cut into 1/4" cubes |
2 tbsp | Lyle' Golden Syrup |
1 cup | packed light brown sugar |
1/2 cup | granulated sugar |
1 | large egg |
1 tsp | vanilla |
1 cup | raisins |
1 cup | chopped toasted walnuts |
Instructions
- Preheat oven to 375 degrees F. Grease baking sheets or line with parchment.
- In a medium bowl, combine oats, flour, baking, powder, baking soda, salt, cinnamon, and ginger.
- Heat 2 Tbsp butter in a skillet over medium heat until foamy. Add apple and cook, stirring occasionally until soft, about 3 minutes. Stir in Lyle's and cook for another minute. Set aside to cool.
- Using an electric mixer, beat remaining 1/2 cup butter, and sugars at medium speed until combined, about 1 minute. add egg and vanilla and beat until blended. at low speed, add flour mixture just until blended. Using a spoon, stir in apples, raisins, and walnuts.
- Drop by rounded tablespoonfuls onto prepared sheets 2 inches apart. Flatten cookies with the palm of your hand. Bake 11-13 minutes, until golden brown on the bottom. Cool on wire rack.
