Coconut Peanut Butter Fat Bombs
I found these gluten-free, keto-friendly treats looking for treats for Amelia. it is a bonus that Randal (doing keto) can also enjoy them.
Ingredients
2/3 cup | natural peanut butter |
2 tbsp | coconut oil, melted |
2 1/2 tbsp | powdered monk fruit sweetener |
1 tsp | vanilla |
1 cup | shredded coconut |
Instructions
- Place peanut butter and coconut oil in a medium bowl and stir until smooth. You can microwave for 30-60 seconds if needed.
- Add monk fruit and vanilla.
- Stir in coconut.
- Scoop onto parchment or waxed paper using a tablespoon or cookie scoop.
- Freeze until hard. These are better when stored cold.
