Coconut Peanut Butter Fat Bombs

I found these gluten-free, keto-friendly treats looking for treats for Amelia. it is a bonus that Randal (doing keto) can also enjoy them.

2/3 cup natural peanut butter
2 tbsp coconut oil, melted
2 1/2 tbsp powdered monk fruit sweetener
1 tsp vanilla
1 cup shredded coconut

Instructions

  • Place peanut butter and coconut oil in a medium bowl and stir until smooth. You can microwave for 30-60 seconds if needed.
  • Add monk fruit and vanilla. 
  • Stir in coconut. 
  • Scoop onto parchment or waxed paper using a tablespoon or cookie scoop.
  • Freeze until hard. These are better when stored cold.
