Peanut Butter Fudge Stripes
This is Eris' pick for 2020. These are like the elf-made grocery store cookies, except better. Made with a peanut butter cookie base and enrobed with chocolate in a "fancy" pattern, these are super delicious.
Ingredients
1 cup | unsalted butter, softened |
2/3 cup | creamy peanut butter |
1/3 cup | packed brown sugar |
1/3 cup | granulated sugar |
1/4 cup | cornstarch |
1 tsp | vanilla |
1/2 tsp | salt |
2 1/2 | cup flour |
1 1/2 cup | chocolate chips |
2 tsp | shortening |
Instructions
- Beat butter and peanut butter with electric mixer until smooth, 1-2 minutes.
- Beat in sugars, cornstarch, vanilla, and salt
- Stir in flour.
- Divide dough into four portions and shape into discs. Wrap and chill for at least 30 minutes.
- Preheat oven to 350F.
- On a lightly floured surface, roll out to 1/4" thick. Cut 2 1/2" circles and using 1/2" cutter, cut out central hole in each cookie.
- Place 1" apart on parchment lined cookie sheets. Bake for 18-20 minutes or until bottoms start to brown. Remove from oven and cool on sheets for 5 minutes before moving to cooling rack.
- Melt chocolate chips and shortening together until smooth. Place in shallow dish.
- Dip bottoms of cookies in chocolate. When set, drizzle stripes of chocolate on tops. Let stand until set.
