Peanut Butter Fudge Stripes

This is Eris' pick for 2020. These are like the elf-made grocery store cookies, except better. Made with a peanut butter cookie base and enrobed with chocolate in a "fancy" pattern, these are super delicious.

Ingredients

1 cup unsalted butter, softened
2/3 cup creamy peanut butter
1/3 cup packed brown sugar
1/3 cup granulated sugar
1/4 cup cornstarch
1 tsp vanilla
1/2 tsp salt
2 1/2 cup flour
1 1/2 cup chocolate chips
2 tsp shortening

Instructions

  • Beat butter and peanut butter with electric mixer until smooth, 1-2 minutes.
  • Beat in sugars, cornstarch, vanilla, and salt
  • Stir in flour.
  • Divide dough into four portions and shape into discs.  Wrap and chill for at least 30 minutes. 
  • Preheat oven to 350F.
  • On a lightly floured surface, roll out to 1/4" thick. Cut 2 1/2" circles and using 1/2" cutter, cut out central hole in each cookie.
  • Place 1" apart on parchment lined cookie sheets. Bake for 18-20 minutes or until bottoms start to brown. Remove from oven and cool on sheets for 5 minutes before moving to cooling rack.
  • Melt chocolate chips and shortening together until smooth. Place in shallow dish.
  • Dip bottoms of cookies in chocolate. When set, drizzle stripes of chocolate on tops. Let stand until set.
