Salted Caramel Chocolate Chip Bars
This is another gluten-free goodie for Amelia. they turned out more like candy than cookies - very gooey and chewy.
Ingredients
1 cup | unsalted butter, softened |
1 1/2 cups | packed brown sugar |
1 tsp | baking soda |
1 tsp | salt |
2 | large eggs |
1 tsp | vanilla |
2 3/4 cups | gluten-free flour blend |
1 12 oz bag | Rolo candies |
1/2 cup | mini chocolate chips |
Instructions
- Beat butter with electric mixer until smooth, 1-2 minutes.
- Add brown sugar, baking soda, and salt and beat well. Beat in eggs and vanilla.
- Stir in flour, candies and chocolate chips.
- Line 9 inch square pan with baking parchment extending ends over edge of pan. Spread dough in prepared pan
- Bake at 350F for 30-40 minutes until golden.
- Cool in pan on rack. cut into bars.
