Chocolate Ravioli
This is Eris' choice for a new recipe for 2021. The title is self-explanatory. These are like the dessert version of filled pasta - chocolately filling in crisp buttery cookies. I think Eris could have filled them a little more, but they are still quite good.
Ingredients for Dough
1 cup | shortening |
1 1/3 cup | sugar |
2 | eggs |
1 tsp | vanilla extract |
2 1/2 cups |
flour |
1 tsp | baking powder |
1/2 tsp | salt |
Ingredients for Filling
12 | Oreo cookies |
8 oz | cream cheese, softened |
1/4 cup | powdered sugar |
Ingredients for Topping
3 oz | chocolate chips |
1 tsp | shortening |
Instructions
- In large bowl, cream shortening and sugar until fluffy. Beat in eggs and vanilla. In separate bowl, whisk flour, baking powder and salt together. Gradually mix into shortening/sugar mixture.
- Divide dough in half. Shape each half into a disc, wrap in plastic wrap and chill.
- For filling, place cookies in food processor and process until crushed. Add cream cheese and sugar and process until blended.
- Preheat oven to 350 degrees F. On a lightly floured surface, roll out dough to a 1/8" thickness. Cut out with a 2" cutter and place on parchment lined sheets. place about 1 1/2 tsp of fill on half ot the cookies and top with the other half. Pinch edges closed with fork. Repeat with remainder dough.
- Bake 15-20 minutes or until lightly browned. Cool on pans for 2 minutes and then transfer to wire rack
- For topping, melt chocolate chips and shortening in microwave. Drizzle over tops of cookies and let stand until set.
