Chocolate Amaretti

One of the gluten-free selections this year, this cookie is chocolately and almondy with a nice chew. 

Ingredients

1 1/4 cups almond paste
 3/4 cups  sugar
 2 large  egg whites, room temp
 1/3 cup  powdered sugar
 1/4 cup  cocoa powder

Instructions

  • Crumble almond paste into large mixing bowl. Add sugar and mix until crumbly. You can also use a food processor for this. Add egg whites and process until smooth. 
  • Sift powdered sugar and cocoa powder over mixture and mix until well combined. 
  • Preheat oven to 350 degrees F. Line cookie sheets with parchment paper. 
  • Drop by tablespoonsfuls 2" apart. Bake 17-20 minutes until cracked on top. Cool on sheets for 1-2 minutes before removing to wire racks.
