Chocolate Amaretti
One of the gluten-free selections this year, this cookie is chocolately and almondy with a nice chew.
Ingredients
1 1/4 cups | almond paste |
3/4 cups | sugar |
2 large | egg whites, room temp |
1/3 cup | powdered sugar |
1/4 cup | cocoa powder |
Instructions
- Crumble almond paste into large mixing bowl. Add sugar and mix until crumbly. You can also use a food processor for this. Add egg whites and process until smooth.
- Sift powdered sugar and cocoa powder over mixture and mix until well combined.
- Preheat oven to 350 degrees F. Line cookie sheets with parchment paper.
- Drop by tablespoonsfuls 2" apart. Bake 17-20 minutes until cracked on top. Cool on sheets for 1-2 minutes before removing to wire racks.
