Salted Peanut Miracles

This is CookieChick's choice for new cookie this yeart. They're kind of like a Pay Day bar - chewy, peanutty, and salty/sweet. I'm sorry if they look a little beat up. I made a technical error when storing them and they sorta melted together. 

Ingredients

1 cup all-purpose flour
1/2 cup crushed pretzels
1/2 tsp baking powder
1/4 tsp baking soda
1/2 cup butter, soft
2/3 cup brown sugar, packed
1 egg
2 tsp vanilla
1 7 oz jar marshmallow creme
1/2 cup  creamy peanut butter
1/4 cup powdered sugar
1 cup salted cocktail peanuts
1 14 oz package caramels, unwrapped
2 Tbsp milk

Instructions

  • Preheat oven to 350 degrees F. Line a 13 x 9 inch pan with aluminum foil.
  • For crust, in a small bowl, combine flour, pretzels, baking soda and baking powder. 
    In another bowl, beat butter on high, for 30-60 seconds or until fluffy. Beat in brown sugar, egg, and vanilla. Beat in flour mixture. Spread dough in prepared pan. Bake 12-14 minutes. Cool on rack.
  • In medium bowl, put marshmallow creme and peanut butter. Microwave 30 seconds or until soft. Stir in powdered sugar. Spread over warm crust. Sprinkle with peanuts
  • In medium heavy saucepan, heat caramels and milk over medium-low heat until smooth. Pour and spread over peanut butter layer. 
  • Cool completely. Cut into bars.
