Chocolate Meringues

One of the gluten-free selections this year. I had never made meringues before, but they turned out pretty good - crispy and chocolatey. 

Ingredients

3 large egg whites, room temp
1/4 tsp cream of tartar
1/4 tsp salt
1 cup sugar
3 Tbsp  cocoa powder
3 Tbsp mini chocolate chips

Instructions

  • Preheat oven to 300 degrees F. 
  • Beat egg whites until foamy. Add cream of tartar and salt. Beat until soft peaks form. Gradually add sugar 1 Tbsp at a time beating at high speed until stiff peaks form. Beat in cocoa. Fold in chocolate chips
  • Using a pastry bag with a large round tip, fill the bag with the meringue. Pipe 2 in rounds onto a parchment-lined baking sheet. 
  • Bake until firm to touch, about 20-25 minutes.
