Chocolate Meringues
One of the gluten-free selections this year. I had never made meringues before, but they turned out pretty good - crispy and chocolatey.
Ingredients
3 large | egg whites, room temp |
1/4 tsp | cream of tartar |
1/4 tsp | salt |
1 cup | sugar |
3 Tbsp | cocoa powder |
3 Tbsp | mini chocolate chips |
Instructions
- Preheat oven to 300 degrees F.
- Beat egg whites until foamy. Add cream of tartar and salt. Beat until soft peaks form. Gradually add sugar 1 Tbsp at a time beating at high speed until stiff peaks form. Beat in cocoa. Fold in chocolate chips
- Using a pastry bag with a large round tip, fill the bag with the meringue. Pipe 2 in rounds onto a parchment-lined baking sheet.
- Bake until firm to touch, about 20-25 minutes.
